Yes I want to control 2 Ceiling Fans from 1 switch have been advised that I need fully variable control, any suggestions

I’d do that a little different and here are my reasons and what I’d do. I’d wire both fans to a light switch then use a remote control. If you want to control both fans with the remote you set both dip switches the same and both fans will respond to one remote. You will be able to retain all functions of the fans that way.
If you set the fans for use with two remotes you can use just one and save some on your already "low" electrical bill.
The remotes will be included,,,Look on the box.
If you have already purchased the fans or they are already installed your stuck with what you have.

A simple ostrich feather duster works fine if you don’t mind vacuuming after the dust settles.
